Nose: Crisp apple and biscuity malt cushion soft waves of oily, coastal smoke. Preserved lemon and black pepper follow, with hints of floral garden herbs.

Palate: Big rich layers of roasted barley and toasted oats join cider apples and subtly tarry smoke.

Finish: Charred oak, barky cinnamon, a touch of clove, stewed tea, and dried herbs.
