High West Bottled In Bond Straight Bourbon Whiskey Tasting Notes
Nose: Honeycrisp apple, wildflower honey, graham cracker crust, and malted milk chocolate with toasted oak spice.
Palate: Layers of peach and cherry cobbler, gingersnaps, roasted marshmallows, puffed wheat cereal, cocoa nibs, molasses, dried thyme, and charred barrel staves.
Finish: Long with nuanced almond browning and brown butter warmth.

High West Distillery is located in Wanship, Utah. The Bottled-in-Bond designation requires the whiskey to be distilled in one season by one distiller, aged at least four years in a bonded warehouse, and bottled at exactly 100 proof. This release marks one of High West’s first fully in-house bourbons under that standard, moving beyond their earlier reputation for blends and sourced whiskeys.
